Recipe makes 1 open-faced toast.

  • ½ an avocado
  • 1 egg
  • 1 slice of wholewheat bread
  • ½ c baby kale
  • 1 tsp Spin Sauce White Sauce
  • A few slices of heirloom carrots
  • 3 halves of cherry tomato

Toast the bread. Slice the avocado finely and place it on the bread with cherry tomatoes. Fry the egg in a non-stick pan lightly sprayed with cooking oil.

Place the toast, egg, and the baby kale and carrots on a plate and drizzle the salad with White Sauce.
